So out of those, which, specifically, involve the curry monster (that sounds Pratchettian to me...), the dragon, and England ruled by mermaids?

The curry monster is from Red Dwarf (and is defeated by a can of lager - because everyone knows that lager kills a good vindaloo).

The dragons are from Discworld - and explode when they hiccup.

In Great Waters is the mermaidy one. It's a book by Kit Whitfield - whose previous book, Bareback, featured a world made up almost-entirely of werewolves, where the non-wolves were the odd ones.

Ooh. I feel like I've heard of Kit Whitfield - she writes very literary-type stuff with SF tropes, yes? With a rec from you, I might have to finally check her out. 'Cuz both of those premises sound like they could be lots of fun.

She's quite good - but, word of warning, she doesn't go in for happy endings. Or happy middles, for that matter...
