So, I was bored...
Say there's no magic...

But, parent issues aside, would she need all that free therapy in a world without magic?

Leaving aside her parents breaking up, the suddent death of ther mother (not magic) would also have an effect. Especially as she was the one who found her.

Xander is a carpenter who goes to comic book conventions to meet tv stars (among them, Cordelia)
Spike steals a motorbike, travels the open road, does the open-mic circuit with his poetry, becomes pretty famous, hangs around at bars getting drunk and trying to pick up cute blondes, until, one day he see one certain blonde fashion consultant who secretly dresses up as Wonder Woman and wishes…

Buffy wanted to move to Europe but her parents' divorce and mother's death of cancer put a crimp in those plans. She still managed to make a career for herself as a fashion consultant due to her force of will, but she occasionally wondered why it felt like something was missing from her life.
Giles played in a band in his 20s (with Ethan), but never made it as a rockstar and went back into academia, which he really preferred.
Xander matured and became more confident, just like the stage directions in episode 1.01 said he would, but he was still a geek. He might well have ended up a carpenter too, though it would take longer without the boost from the ferrula gemina spell in 'The Replacement'.
Even if this was a world which had never had any form of magic, I'd trust Willow to find a way to get it back. :-) Otherwise, she probably would work in IT. She'd still realise she was gay after she reached university, even if it didn't happen quite the same way as on the show. She'd get involved in some form of political activism and hook up with someone through that, but it probably wouldn't be Tara.
Spike looked after his mother until she died, worked in the City, lowered his standards and married someone he didn't really love, and secretly wrote poetry in his journal reflecting on what might have been. He died peacefully in his sleep in 1923.
Cordelia's dreams of fame died, but she was practical enough to make the best of the life she ended up with, and she was happy.
A world without magic doesn't have mystical Keys. Alternatively, if it's only THIS world that has no magic, the Key continues to exist extradimensionally, but it's not called Dawn and doesn't have a sister.

Would he have needed the confidence boost if he hadn't spent four years as "the ordinary one" in a group of extraordinary people?

In a world without magic, Buffy spends the rest of her adolescence thinking she's going to to either become a fashion consultant or marry Christian Slater. Then she gets an internship of some kind, impresses the boss with her natural leadership, and quickly becomes a Project Manager, and then VP of, I don't know, product development or something. Anyway, point is: Buffy's a leader. The world will recognize that, magic or no.
Obviously Spike's dead & Dawn never existed without magic. But if not that, Spike travels via motorbike and Dawn writes a novel (whether it's actually published is another question, of course).
Following the crowd on the other answers. I also have to add that absent magic, Willow and Tara met during a Stitch & Bitch knitting class and are still together. Xander never got together with Cordy at all, but he did get together with Anya, who still works retail (unless she's been dead for a 1000 years).

Anyway, I realized a while back that the scariest, but arguably best, bosses I've worked for have been women a bit like Buffy. Doing the impossible is easier and less dangerous than crossing someone like her.

The thought of Willow marrying Oz first made me totally gleeful and planning their wedding and domestic life - and then I pictured her finally realizing she was gay after like 20 years of marriage and being too meek to do anything about it, and got all depressed...
