Really? I don't find it that squicky at all. I mean there is the whole thing of him being ridiculously in love with her daughter, but I thought he saw her as more of a friend than a motherly figure.
He said she was the only one out of the lot of them that he could stand, because she treated him decently rather than as a monster. I just watched season 5 (so glad I did that before I read this btw) and I saw him enjoying her company, and she treated him well, and was neither afraid of him nor condescending because he wasn't a threat any more. For a long time she and Dawn were the only ones to treat him like a person. But I never saw her really being protective or caring for him, nor did I ever see him look up to her in any way.
I may be missing stuff, but if you take out the fact that he wants to sleep with her daughter, I don't think Spike/Joyce is a bad pairing. Sure it was only ever platonic in canon, but since when did that matter?
